Using medicinal herbs in a responsible way requires knowledge. However, there are plenty of herbs you can eat or process safely. And the fun part: you can just pick them in the wild!
Dandelion – lettuce and lemonade
Young dandelion greens form the first lettuce of the year, known as mol lettuce. In the past, people would eat this in spring, it was a welcome change to eat fresh vegetables again after a winter of heavy, fatty foods. Plus, these fresh leaves help cleanse the body, aiding fat digestion and supporting kidney function.
You can also make a delicious lemonade from the flowers. Simply bring 50 dandelion flowers, a sliced lemon, and 50 grams of sugar to a gentle boil in a pan of water until the sugar dissolves. Let it steep for a few hours, then strain the lemonade into a clean bottle.

Daisies – in the tea
Daisies help dissolve mucus in your throat and boost immunity. To make daisy tea, pour boiling water into a teapot and add a handful of daisies, stems included. It’s delicious and looks cheerful too, with all those little flowers floating on top.

Plantain – nature’s remedy
Plantain is good for almost everything! When you crush the leaves, they release a juice that soothes pain from cuts, nettle stings, and mosquito bites. Just rub the crushed leaf over the affected area. The best part? Plantain grows everywhere, so this natural remedy is always within reach.
